From the streets, our beloved ice creams have made it to the global stage!
The Philippines’ dirty ice cream and halo-halo have recently made their mark on the worldwide culinary scene, earning recognition as two of the world’s best frozen desserts.
Photo from LJay Manayon
These Filipino delicacies were celebrated by TasteAtlas, a renowned food encyclopedia that ranks and highlights culinary treasures from around the globe.
In their prestigious list of the “50 Best Rated Frozen Desserts in the World,” sorbetes claimed the impressive fifth position with a score of 4.5 out of 5, while halo-halo found its place at the 43rd spot with a score of 3.8.
Let us get to know a little bit more about these desserts!
Sorbetes, and how it became dirty ice cream
The origins of these beloved Filipino desserts can be traced back to diverse cultural influences.
Photo from Oscar L. Huervas III
Sorbetes, often referred to as dirty ice cream, holds a special place in Filipino hearts as a nostalgic treat. Its roots can be linked to the tradition of Spanish-style ice cream brought by the colonizers. Over time, local ingredients and flavors were incorporated into the recipe, giving it a distinct Filipino twist.
The nickname “dirty ice cream” may raise questions considering the deliciousness of sorbetes, but where and how it is served sheds light on why it acquired such a label.
The method of selling sorbetes plays a role in the development of its nickname. It is sold by street vendors, who offer this frozen treat in urban areas, thereby subjecting it to the pollution and dirt of the surroundings. These vendors, known as sorbeteros, frequently handle bills, cones, and the ice cream itself without washing or changing their hands, which reinforces the perception of unsanitary conditions.
Nevertheless, despite its unconventional name, Filipinos wholeheartedly embrace and savor the distinct flavors of “dirty ice cream” with enthusiasm. They acknowledge that the delightful taste and experience far outweigh any concerns related to its nickname.

Halo-halo and its origins
On the flip side, halo-halo is a captivating combination of flavors, textures, and vibrant colors. This invigorating dessert exemplifies culinary inventiveness and inclusiveness.
Photo from Oscar L. Huervas III
Its origins are often linked to anmitsu, a popular Japanese summer beverage that features shaved ice adorned with various toppings.
Filipino chefs transformed this concept by infusing it with their unique style and tropical ingredients. A typical serving of halo-halo is a delightful fusion of sweetened fruits, jellies, beans, and other components, all layered over crushed ice and garnished with leche flan (caramel custard) and ube ice cream.
The contrasting textures and harmonious melding of flavors make halo-halo an irresistible indulgence, particularly in the scorching heat of the Philippines.

How these two desserts became a statement
Both sorbetes and halo-halo have become deeply rooted in the fabric of Filipino culture, transcending generations and societal boundaries.
These frozen delicacies hold a significance that goes beyond being mere desserts; they represent shared moments of joy, togetherness, and cherished childhood memories.
Whether savored by families on scorching summer afternoons or enjoyed by friends during festive gatherings, sorbetes and halo-halo evoke a strong sense of nostalgia and happiness.
From bustling city streets to serene rural communities, these frozen desserts have seamlessly integrated into the essence of Filipino culinary identity, proudly showcasing the country’s abundant cultural heritage.
With their recent global recognition as exceptional frozen desserts, sorbetes and halo-halo have rightfully earned their place among the crème de la crème.

These Filipino creations continue to captivate taste buds and capture hearts worldwide as people embrace the enticing flavors, delightful textures, and captivating narratives they offer.
As Filipinos proudly share their beloved frozen treats with the world, sorbetes and halo-halo emerge as delectable ambassadors of Philippine cuisine, inviting everyone to partake in the sweetness and warmth of Filipino culture.

The businessman truthfully said that he did not want to be seen as the victim and did not want to use his sickness for pity. He wrote, “This was something I never thought I’d share at all on social media. Maybe I never did because I preferred not to be seen as the victim or to use this illness to appeal for pity..”
Bariou expressed that he was diagnosed with cancer three years ago. He admitted that he felt an immense sensation of fear. He felt angry and frustrated after being diagnosed.
“The enemy was invisible and deep inside my own body – a body that I never doubted before, at the age of 27….”

“I thought I’ll never have kids, my own family, or finish what I started in Siargao. I will never get my first barrel surfing”,
HE CONTINUED.
He questioned everything. He questioned why it had to be him, why it was happening to him. He felt devastated after hearing that he was dying. Christophe then decided to stay in Siargao and enjoy the remaining days of his life. However, he received news that he still had a chance to heal.
Photo from cbariou on InstagramPhoto from cbariou on Instagram
“While trying my best to accept my fate between fear, anxiety, anger, and frustration, I learned from other doctors that there was a chance to heal, but I had to drop everything, leave immediately, and go back to France to a specialized hospital.
The businessman went to treatment at the leading cancer research center in Europe. He spent two months getting intense chemotherapy and immunotherapy. After everything he endured, he was determined cancer free.
“After only two months of intense chemotherapy and immunotherapy, I was in full remission. Something I learned from this, going through all the terrible side effects of the chemo, is that despite everything, my life goals did not change at all. I wanted to get back on my feet as fast as possible and continue everything I started but with more intention and even more motivation.”
– CHRISTOPHE BARIOU.

With his experience, Bariou expressed that with all the cruelty that surrounded him, he would push forward kindness and compassion. He hopes some of his readers will realize that “they should not wait for life to hit them hard to realize all of this. I can make mistakes, I can make bad decisions, but one thing I never want to have again is regrets.”
The entrepreneur also thanked his family and friends who stood by him in his post.

Bluewater Sumilon Island Resort is known for its beautiful white sand and azure waters. But what’s even more interesting is that the resort plays a huge role in preserving nature. With eco-initiatives, Bluewater Sumilon Island Resort aims to restore nature’s truest glory.
To further elevate that, they have come up with a fun-filled project that teaches kids and parents to become eco-warriors— the Bluewater Sumilon Summer Camp.
Sugbo.ph was given an incredible chance to try out the 3-day summer camp ourselves, and here’s what we think.
Bringing the “Glam” in Glamping
The 3-day summer camp at Sumilon Island is not your usual outdoor camping because they offer “glamping.”
The Campers or Glampers get to stay in a boho-inspired glamping tent complete with mattresses, pillows, and a refrigerator. There is even a cooling system to further ensure a relaxing stay. But the best part is absolutely waking up to a beautiful beachfront view. The glamping tents are situated near the beach so campers can enjoy the faultless view of the sea.
The tent was spacious, and the mattresses were incredibly soft and great for sleeping. There was even complimentary caramel popcorn and Yema waiting for us.
A 3-Day Itinerary Filled with Nature-ific Activities
Don’t have an itinerary? Worry not because the 3-day summer camp has a complete 3-day itinerary for you and your kids. The itinerary includes various activities that kids and kids at heart will surely love.
Kite Making, Snorkeling, Trekking, Kayaking, Coral Planting, and Fish Feeding, among others, were the activities team Sugbo.ph was able to try. One of the team’s favorite activities has got to be the Coral planting because we got to see the Bluewater Sumilon team in action as they restore marine life, one coral at a time.
And the team’s second favorite activity was trekking. But, of course, it was no ordinary trek because we made our way to the Baluarte Lighthouse, which held so much history and secrets of the past.
We even witnessed the feeding of Blacktip reef sharks and went birdwatching. You can check out the full itinerary below:
And, of course, the summer camp is not complete without the camp master. Bluewater Summer Camp Master is Joselito “Boboi Costas,” an ecotourism and sustainable Tourism Expert. Sir Boboi was able to teach everyone the importance of being environmental stewards.
One activity conducted by Sir Boboi that struck us the most was arranging waste materials from the first to the last to decompose. We saw how long plastics and other waste materials stay on Earth before fully decomposing.
It was also fantastic to see kids playing such a significant role in helping out mother nature.
Final Verdict
Five words, “We want to go back!”
The Bluewater Sumilon Summer Camp was indeed such an incredible experience. We weren’t there just to relax and swim but also to learn more about the beauty of nature and the importance of why we need to preserve it. The 3-day summer camp taught us lessons we never knew we needed.
I guess it’s safe to say that three days were indeed too short. Time does fly when you are having fun, and at Bluewater Sumilon, we had tons of fun. The camp is also an excellent way for parents to bond with their kids and elevate their kids’ potential as eco-warriors.
