Tuslob-buwa is an exotic food that originated in Brgy. Pasil, Cebu City. It is made from a pig’s brain, soy sauce and some oil that are mixed together. To add flavor, spices like onions, garlic, chili, and shrimp paste are also added to the mixture. It is best enjoyed with puso (hanging rice) and its name is derived from the way it is being eaten. Tuslob means “to dip” and buwa “bubbles”; hence, it’s to dip into the bubbly mixture that serves like a gravy.
Tuslob-buwa hubs have sprouted like mushrooms all around Cebu. Buwaan sa Dagat is one of those few who are offering new ways to enjoy this delicacy which we can call a Cebuano trademark.
